Ingredients

  • 1 cup apple cider vinegar
  • 1/2 tsp peppercorns
  • 1/2 tsp salt
  • 1 tsp honey or sugar
  • 1 large red onion (about 10-12 ounces)

Instructions

  1. Combine apple cider vinegar, peppercorns, salt, and honey in a small saucepan over medium heat until the liquid comes to a gentle boil.
  2. Meanwhile, slice the red onion into medium sized strips and put them aside into a bowl or mason jar.
  3. Cover the red onions with the hot liquid and let marinate for at least 1 hour or up to overnight before serving.
